Snowflake Christmas Whoopie Pies

Yesterday I baked whoopie pies for Christmas. Below is the recipe.


Whoopie pies:

  • 200g plain flour
  • 2tsp baking powder
  • large pinch of salt
  • 55g ground almonds
  • 115g softened butter
  • 150g caster sugar
  • 1 large egg, beaten
  • 1tsp almond extract
  • 100ml milk

Buttercream filling:

  • 150g softened butter
  • 8tbsp double cream
  • 280g icing sugar


  • 115g icing sugar
  • 1-2tbsp warm water


  • Preheat the oven to 180 degrees Celsius/350 degrees Fahrenheit.
  • Line 2-3 baking sheets with baking paper.
  • Sift together the plain flour, baking powder and salt.
  • Stir in the ground almonds.
  • Place the butter and sugar in a large bowl and beat until pale and fluffy.
  • Beat in the egg and almond extract, then half the flour mixture and the milk.
  • Stir in the rest of the flour mixture.
  • Beat until thoroughly incorporated.
  • Pipe or spoon mounds of the mixture onto the baking sheets, spaced well apart to allow spreading.
  • Bake in the oven, one sheet at a time, for 10-12 minutes until risen and just firm to the touch.
  • Cool for 5 minutes and then transfer to a wire rack and leave to cool completely.
  • For the filling, place the butter in a bowl and beat with an electric whisk for 2-3 minutes until pale and creamy.
  • Beat in the cream.
  • Gradually beat in the icing sugar and continue beating for 2-3 minutes until the buttercream is very light and fluffy.
  • For the icing, sift the icing sugar into a bowl and gradually stir in enough water to make a smooth, thick icing that will coat the back of a wooden spoon.
  • To assemble, spread or pipe the buttercream on the flat side of half the cakes and top with the rest of the cakes.
  • Spoon the icing into a piping bag and pipe ssnowflake patterns on the top of the whoopie pies.
  • Leave to set.
